Bar-Style Online Pizza Class with Adam Kuban from the Slice Blog & Margot’s Pizza

Noel and Adam Cuban have known each other since the beginning of Noel’s pizza career, and Noel has been trying to convince Adam to co-teach #ZoomPizzaClasses with him for almost as long.

This is the perfect online class making class for people who love not just thin crust pizza but perticulary thin crust pan pizza. This VOD virtual pizza class is intended for professional pizza makers, chefs and intermediate home bakers. This class will teach you everything you need to know about what most people call “bar pies” but what we like to call bar pizza or bar-style pizza.  Whether you are a pizza professional or a home baker, this VOD (video on demand) virtual pizza class is for you!

Our Special VIP Guest and Co-Instructor for this class will be none other than Adam Kuban, known the pizza world around for his insight into the New York Pizza scene and his knowledge of what separates the best of the best pizzas in NYC.

Adam will be helping us explore some of the most celebrated but under the radar pizzerias in the US, mostly on the East Coast, serving this iconic but under-rated style of hyper-regional thin crust pizza. Adam Kuban will be walking attendees through the recipe and techniques for his bar-style pizza.

As well, Adam will provide complete recipes for and show us how to prepare all of the toppings and sauces for a variety of his most popular and iconic pizza creations…

  • THE MARGOT-RITA: sauce, 5 cheeses, +basil
  • THE LOVE SUPREME: sausage, green peppers, onion
  • THE FUNGHITOWN: mushrooms, Kublend® and truffle cheese
  • THE RANCHERO: nacho cheese sauce, Kublend® cheese, jalapeno, blue corn chips, ranch
  • Nacho Cheese Sauce for Ranchero (Fancy + Easy Versions)
  • Margot’s Bar Pizza Pizza Sauce
  • Super Simple Seasoned Sauce
  • Simplist Pizza Sauce Ever
  • Pickled Jalapeños for Ranchero

Kuban is the internet’s original pizza blogger, more recently known for his sells-out-in-seconds bar-pizza pop-up, Margot’s Pizza.  Join this class and we’ll walk you through the dough recipe and techniques to make this pizza in your home, pizzeria or restaurant.

It’s all informed by nearly two decades chronicling pizza first as New York’s original pizza blogger at Slice NY, then as the founding editor of Serious Eats, and now on his influential pizza-focused Instagram account @akuban. It took Adam many years to perfect these recipes, and many visits to some of the most popular and iconic pizzerias in the US including the following…

From www.margotspizza.com:

“If you know Adam L. Kuban from anything, it’s probably from Slice, A Hamburger Today, and/or Serious Eats. Adam founded Slice in 2003 to document his own exploration of the NYC pizza scene and to help others find their own path to perfect pizza. In 2005 he co-founded A Hamburger Today. Both were enormously influential and served as templates for food-blogging in general. In late 2006 the as-yet-unlaunched food website Serious Eats bought both those sites from Adam and brought him on board to serve as SE‘s founding editor, a position he held until early 2011. During that time he created the voice and tone of the site and helped guide it to two James Beard Awards in 2010.”

Noel and Adam have known each other since the very beginning of Noel’s pizza career, and Noel has been trying to convince Adam to co-teach #ZoomPizzaClasses with him for almost as long. This is a recording of the first online class that Noel and Adam taught together but the second class released on-demand: Bar-Style Pizza, a run away success both as #ZoomPizzaCollabs and on-demand classes go.

Here are a few links for those of you who may not be as familiar with Adam the rest of the OG dough dorks and pizza nerds:

Before taking this class, we recommend you take Intermediate Level 1 as a prerequisite.

Noel Brohner is a Los Angeles based pizza consultant who offers both Live Zoom and Video On-Demand online pizza classes for professionals and home bakers alike. These online pizza classes will allow you to progress to Neapolitan, New York Pizza, Detroit-Style Pizza, and even Sourdough and high hydration pizzas.

After you Register:

We’ll send you a list of ingredients you’ll need, recipes and instructions… everything you’ll need to prepare for this class in advance. Also, Adam suggests that you may want to order this pan if you’d like to use the same pan he will be using. Lloyd Pans just came out with this new pan as well, inspired by Noel and Adam’s class. Neither is necessary to complete the course but both are highly recommended.

We will send you an email with a link to login to our site and access your dashboard. All class materials and recipes are available on the video page, and you can begin watching immediately after registration.

I grew up in the North East and didn’t even realize I had been eating Bar style pizza my whole life. To me, it was just pizza. Once I realized it, I tried over and over to get it right. I came close but this class took me over the top. I can now have people over and serve Bar style pies knowing they’re as good as you can get anywhere. Slow Rise RULES!!! Thank you so much Noel and the Slow Rise team.

Adam is truly a master at bar style pizzas. If you remember the days of skating rink pizza, this is for you. Adam combines that nostalgia with a craft that he has honed over many years. The recipes are all exactly as Adam uses for his pop-ups and he walks you through step by step how to produce the pies of his childhood but with an artisan spin. I recommend this for anyone who likes pan pizza and for anyone that enjoys cheese blends, a beautiful sauce, and how to get that extra crispy crust. I was truly impressed by this masterclass in bar pies.
