On-Demand Gluten-Free Class in a Home Gas Oven with Aaron Rice from Authentic Foods –  Beginner Level 2

This is the class so many of you have been waiting for: gluten-free pizza that doesn’t taste like cardboard! Second generation gluten-free expert Aaron Rice from Authentic Foods joins us to showcase his company’s next-level pizza crust mix. In this Beginner Level 2 pizza class, Aaron will teach you all the tricks and techniques you need to know to mix, ferment, shape, and bake your own gluten-free masterpiece pizza at home.

We will concentrate on round pizzas cooked directly on the hearth however, as you can see from some of the accompanying photos, if you practice and sharpen your pizza making skills, you can also use this dough to make delicious pan pizzas as well: Sicilian, Detroit, Grandma, you name it. And Bar-style pizzas come out extra crispy as well. In addition, we will include two recipes for this class, one for a same day dough and another for a next day dough.  Both work great!

When we first got our hands on this stuff, we couldn’t believe the beautiful crust color we were getting, not to mention the satisfying texture and flavor. There are many gluten-free products on the market but we have chosen to feature this product because we believe that its quality relies on the highest level of ingredient sourcing we have seen and tasted anywhere. We don’t like it because it’s gluten-free; we like it because it’s delicious.

Like many successful businesses, Authentic Foods is a local, So Cal, family run and owned business, started by Aaron’s father Steven, who works side by side with his children to this day:

“I started Authentic Foods in 1993 when I heard about a group of people who had Celiac Disease and could not eat wheat or gluten. With a great deal of experience in the food industry and a background in biochemistry, I realized that I could develop baked goods that could help Celiacs get the proper nutrition in their diets with gluten-free baked goods that taste as close to, if not better than the same baked good with gluten. We work hard to make sure all of the Authentic Foods baking mixes and flours are not just like any gluten free baking mix or flour, but that they’re better. Our goal is to make baking mixes that will keep you from wishing you could eat gluten again. We want you to be able to enjoy your baked goods like anyone else who is not on a gluten-free diet.”

ImportantThis class is a special collaboration with Authentic Foods and requires the use of their proprietary gluten-free pizza crust mix. Before signing up for this class, we suggest you visit their website and order their dry pizza crust mix.  There are other retail options as well including Amazon’s single pack and two-pack. For bulk orders, professional bakers and pizza makers should check with their local wholesalers including Worldwide Produce.
