In this On-Demand, Advanced pizza making class, Noel and Lee will walk you through the mixing, fermenting, balling, panning, topping, and baking of Lee’s now famous Detroit pizza.  As many in the professional US pizza community already know, Lee Hunzinger is heralded as a pizza maker’s pizza maker.  Â

Lee is a master of some of our favorite regional styles: New York Pizza, Neapolitan Pizza, Double-Stuffed Pizza, Meatzilla, Sicilian Pizza, Garlic Knot Pizza, and probably almost anything else you can imagine.
Working as the Corporate Executive Pizzaiolo for¨Zoli’s and Cane Rosso, Lee has been featured in PMQ Magazine while his restaurants are and was listed among the best pizzerias in America by Thrillist. The Daily Meal also placed both Zoli’s and Cane Rosso in the top 101 Pizzerias of America. Ever pushing the envelope, Lee and company opened Thunderbird Pies in Dallas to showcase their superb take on Detroit pizza.Â
Please note: The Poolish, when scaled down for home baking, requires a very small amount of yeast. For this reason we highly recommend that you purchase a precision scale like this that is capable of measuring to the hundredth of a gram. We think it’s a good idea to have one for measuring yeast anyway, and certainly worth the small investment.

Noel Brohner is a Los Angeles based pizza consultant who offers both Live Zoom and Video On-Demand online pizza classes for professionals and home bakers alike. Outstanding class. Lee was excellent and Noel does a great job moderating as always. Was looking to learn a new style and DSP was the answer. Fun to make and Lee is very generous with the recipes he provides. I find pan pizza to be forgiving given there is really no stretching and launching to mess up. Great style to learn. Very happy with this class!
