If you are new to pizza-making or have been struggling to make better pizza at home, this is the place to start.

To fully understand the craft of pizza making, we start with the fundamentals – gluten development, basic fermentation techniques, and learning to understand TIME**, one of the two “secret ingredients” that most people either forget about or never learned were so important to making awesome artisan bread. We will mix dough by hand and learn how to ferment, shape, stretch, top, and bake.

We break this class up into two short sessions:

  • Day 1: On the first day of our online pizza making class, we get down and dirty and learn how to mix the old fashioned way—by hand! We will teach you about bulk fermentation and the magic of the stretch and folds. We’ll get into all of the details of dividing, preshaping, bench resting, and shaping. Finally, we’ll offer you three different fermentation timelines, balancing traditional methods with all of your busy lifestyles.
  • Day 2: Make sure you come to class hungry because we’ll be baking and of course eating pizza together! We’ll teach you multiple techniques to stretch your pizza and will also go over topping preparation, baking technology, and how to hack your home oven to get pizzeria-like results that we know you’re going to love. And don’t worry too much about toppings. We’ll show you our favorite recipe for Grandma sauce but really any of your favorite toppings will work.


We recommend this class for all levels, not just beginners. It offers the solid foundation you need in order to progress to our next pizza classes: Intermediate Level 1 (the class where we’ll learn about TEMPERATURE**, the other “secret ingredient”), Advanced Level 1, and onward to our Level 2 classes All you need is a bowl, some flour, some filtered water, salt, and a pinch or two of yeast. But we warn you: you’ll have to roll up your sleeves and get down and dirty with us for this class. You’ll be making artisan bread and pizza in no time!

Noel Brohner is a Los Angeles based pizza consultant who offers both Live Zoom and Video On-Demand online pizza classes for professionals and home bakers alike. These online pizza classes will allow you to progress to Neapolitan, New York Pizza, Detroit-Style Pizza, and even Sourdough and high hydration pizzas.

    I was glad I started with the beginner class. I’ve gotten more from this class than from the books and recipes I’ve read. If you want to make consistently great dough every time, this is the class for you. The class builds an outstanding pizza foundation. Being able to now turn out consistently great pizza after every bake has been very rewarding. You can easily stop with this class, but I’m sure you will get hooked on Noel’s classes. I thought I was beyond a “beginner” class and I was wrong. I am glad I started here. This beginner class is beyond “beginner” and extremely thorough. I would highly recommend starting here.

    What a fantastic class to start your pizza journey. The class gets into some advanced topics but does so in a way that is easily approachable for those new to the pizza game. Noel does a great job keeping engagement throughout and the recipe is a great bonus.     My 9 year old daughter and I just got done with this class and I am just so happy with our results, and the knowledge we got out of it. I have tried off and on for years and had hit and miss results with my pizzas, mostly misses, especially when it comes to opening up a doughball evenly. I get so frustrated because it will always come out uneven and tear every single time. I have tried different YouTube videos, books, etc and nothing seemed to click for me for whatever reason. Noel is such a great and thorough teacher, I was able to follow along with his techniques and am proud to say there were no issues this time around opening my dough!
