TWO-PART, HANDS-ON, FOUR HOUR VIRTUAL PIZZA CLASS – BEGINNER LEVEL 1

If you are new to pizza-making or have been struggling to make better pizza at home, this is the place to start.

To fully understand the craft of pizza making, we start with the fundamentals – gluten development, basic fermentation techniques and learning to understand TIME, one of the two “secret ingredients” that most people either forget about or never learned was so important. You will mix the dough by hand and learn how to ferment, shape, stretch, top, and bake.

We break this class up into two short sessions:

  • Day 1: On the first day, we get down and dirty and learn how to mix the old fashioned way, by hand! We will teach you about bulk fermentation, and you’ll learn the magic of the stretch and folds. We’ll get into all of the details of dividing, preshaping, bench resting, and shaping. Finally, we’ll give you three different fermentation schedules to choose from in order to show you some of the traditional timings but also to accommodate your busy schedules.
  • Day 2: Make sure you come to class hungry because we’ll be baking and of course eating pizza together! We’ll teach you multiple techniques to stretch your pizza and will also go over topping preparation, baking technology, and how to hack your home oven to get pizzeria-like results that we know you’re going to love. And don’t worry too much about toppings. We’ll show you our favorite recipe for Grandma sauce but really any of your favorite toppings will work.

 

We recommend this class for all levels, not just beginners. It will set you up to progress to our next pizza classes,Intermediate Level 1 and Advanced Level 1. All you need is a bowl, some flour, some filtered water, salt, and a pinch or two of yeast. But we warn you: you’ll have to roll up your sleeves and get down and dirty with us for this class.

Noel Brohner is a Los Angeles based pizza consultant who offers both Live Zoom and Video On-Demand online pizza classes for professionals and home bakers alike. These online pizza classes will allow you to progress to Neapolitan, New York Pizza, Detroit-Style Pizza, and even Sourdough and high hydration pizzas.

    I was glad I started with the beginner class. I’ve gotten more from this class than from the books and recipes I’ve read. If you want to make consistently great dough every time, this is the class for you. The class builds an outstanding pizza foundation. Being able to now turn out consistently great pizza after every bake has been very rewarding. You can easily stop with this class, but I’m sure you will get hooked on Noel’s classes.
